A quick and easy sandwich combining crispy bacon, fresh lettuce, juicy tomato, and creamy avocado spread for a satisfying lunch or casual dinner.

- 8 slices thick-cut bacon
- 4 slices sandwich bread (sourdough or country white preferred)
- 1 large ripe avocado, peeled and pitted
- 4 large leaves romaine or butter lettuce
- 1 large ripe tomato, sliced
- 1 teaspoon freshly squeezed lemon juice
- Salt to taste (preferably flaky sea salt)
- Black pepper to taste
- Optional: pinch of smoked paprika or garlic powder for avocado mash
Instructions
- Cook the bacon in a skillet over medium heat for 4-6 minutes per side until crispy but not burnt. Drain on paper towels.
- Toast the bread slices until golden and crisp but still soft inside, using a toaster or oven broiler for 1-2 minutes per side.
- In a small bowl, mash the avocado with a fork. Add lemon juice, salt, black pepper, and optional smoked paprika. Mix until creamy but slightly chunky.
- Slice the tomato into 1/4-inch thick slices and pat dry with a paper towel if very juicy.
- Spread a generous layer of avocado mash on one side of each toasted bread slice.
- On two slices of bread, layer 2 slices of crispy bacon, lettuce leaves, and tomato slices. Season lightly with salt and pepper.
- Top with the remaining bread slices, avocado side down.
- Cut sandwiches diagonally and serve immediately while bacon is warm and bread is crisp.
Notes
Cook bacon on medium heat and flip only once for even crispness. Add lemon juice to avocado to prevent browning. Toast bread well and pat tomato dry to avoid soggy bread. Prepare bacon and avocado separately if making ahead. Save bacon grease for other cooking uses.
