Ingredients
- 2 everything bagels, sliced in half
- 4 thick-cut bacon strips
- 2 large eggs

Instructions
- Prep the ingredients: Slice bagels, set out bacon, cheese, and any add-ons. Whisk eggs with milk, salt, and pepper in a small bowl.
- Cook the bacon: Place bacon strips in a cold nonstick skillet. Turn heat to medium and cook until crispy, flipping once (about 4-5 minutes per side). Transfer to a paper towel-lined plate to drain.
- Toast the bagels: Spread butter on cut sides of each bagel half. Sprinkle everything bagel seasoning on top. Toast in a toaster or oven at 375°F until golden and crispy (about 3-4 minutes), or toast cut side down in the skillet.
- Scramble the eggs: Wipe out most bacon grease, leaving a thin coating. Pour in whisked eggs. Let sit for 20 seconds, then gently stir with a spatula until just set but still creamy (1-2 minutes). For runny yolks, cook eggs sunny-side up instead.
- Assemble the sandwich: Layer one bagel half with a slice of cheddar cheese, spoon on scrambled eggs, top with crispy bacon, and add any extras. Cap with the other bagel half, pressing gently.
- Optional – pan pressing: For an ultra-crispy finish, return the assembled sandwich to the skillet, press gently with a spatula, and toast for 1 minute per side.
