  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 cup cornstarch
  • 2 tablespoons olive oil (or avocado oil)
  • 1 (32-ounce) bag frozen potato tots
  • 1/2 cup unsalted butter, melted
  • 4 large garlic cloves, minced
  • 2 tablespoons fresh parsley, finely chopped
  • 1/2 teaspoon flaky sea salt
  • Optional: 1/2 cup shredded Parmesan cheese
  • Optional: Finely sliced green onions
  • Optional: Crushed red pepper flakes

Instructions

  1. Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper or a silicone mat.
  2. In a medium mixing bowl, toss the chicken pieces with kosher salt, black pepper, smoked paprika, and garlic powder. Sprinkle the cornstarch over the chicken and toss until evenly coated. Drizzle with olive oil and mix well.
  3. Spread the seasoned chicken pieces and frozen potato tots in a single layer on the prepared baking sheet, ensuring they are not crowded.
  4. Bake for 15 minutes, then use tongs to gently flip the chicken and tots. Bake another 10-15 minutes, until the tots are deeply golden and the chicken is cooked through (internal temp should be 165°F).
  5. While the chicken and tots are baking, melt the butter in a small saucepan over low heat or microwave. Add the minced garlic and let it sizzle for 1-2 minutes (do not brown). Stir in the chopped parsley and set aside.
  6. As soon as the chicken and tots come out of the oven, transfer to a large bowl. Drizzle the hot garlic butter mixture over and toss to coat. If using Parmesan or green onions, sprinkle them on now while everything’s hot.
