Ingredients

  • 4 medium-sized russet potatoes, scrubbed clean
  • 2 tablespoons olive oil
  • 2 cloves garlic, freshly minced
  • 4 tablespoons unsalted butter, melted
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon fresh thyme, chopped
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 1/4 cup cooked bacon bits (optional)
  • 1/2 cup sour cream for serving
  • 2 green onions, thinly sliced for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Scrub the potatoes clean under running water and pat them dry. Pierce each potato several times with a fork to prevent them from bursting during baking.
  2. Place the potatoes on a baking sheet and rub them with olive oil. Sprinkle a pinch of salt over each potato. Bake for 40-50 minutes or until they’re fork-tender.
  3. Remove the potatoes from the oven and let them cool for 10-15 minutes, just enough to handle them comfortably.
  4. Once cooled, slice each potato in half lengthwise. Scoop out the flesh, leaving about 1/4-inch of potato attached to the skin. Save the scooped flesh for another recipe.
  5. Melt the butter in a small bowl. Stir in the minced garlic, parsley, thyme, salt, and pepper.
  6. Brush the potato skins generously with the garlic herb butter mixture, inside and out.
  7. Place the potato skins back on the baking sheet, skin-side down. Bake for another 10-15 minutes until crispy.
  8. Sprinkle shredded cheddar cheese into each potato skin and return to the oven for 5 minutes, or until the cheese melts.
  9. Top with bacon bits, sour cream, and green onions. Serve immediately while they’re hot and crispy.
