These crispy garlic herb potato skins are the ultimate party snack, combining golden, crunchy skins with flavorful, buttery fluffiness and customizable toppings.

- 4 medium-sized russet potatoes, scrubbed clean
- 2 tablespoons olive oil
- 2 cloves garlic, freshly minced
- 4 tablespoons unsalted butter, melted
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon fresh thyme, chopped
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- 1/4 cup cooked bacon bits (optional)
- 1/2 cup sour cream for serving
- 2 green onions, thinly sliced for garnish
Instructions
- Preheat your oven to 400°F (200°C). Scrub the potatoes clean under running water and pat them dry. Pierce each potato several times with a fork to prevent them from bursting during baking.
- Place the potatoes on a baking sheet and rub them with olive oil. Sprinkle a pinch of salt over each potato. Bake for 40-50 minutes or until they’re fork-tender.
- Remove the potatoes from the oven and let them cool for 10-15 minutes, just enough to handle them comfortably.
- Once cooled, slice each potato in half lengthwise. Scoop out the flesh, leaving about 1/4-inch of potato attached to the skin. Save the scooped flesh for another recipe.
- Melt the butter in a small bowl. Stir in the minced garlic, parsley, thyme, salt, and pepper.
- Brush the potato skins generously with the garlic herb butter mixture, inside and out.
- Place the potato skins back on the baking sheet, skin-side down. Bake for another 10-15 minutes until crispy.
- Sprinkle shredded cheddar cheese into each potato skin and return to the oven for 5 minutes, or until the cheese melts.
- Top with bacon bits, sour cream, and green onions. Serve immediately while they’re hot and crispy.
