- 2 pounds Yukon Gold or red potatoes, washed and cut into 1-inch chunks
- 6–8 whole garlic cloves, peeled
- 3 tablespoons extra virgin olive oil
- 2 tablespoons chopped fresh rosemary
- 2 tablespoons chopped fresh thyme
- 2 tablespoons chopped fresh parsley
- 1 teaspoon kosher salt
- ½ teaspoon freshly ground black pepper
- Optional: pinch of smoked paprika or chili flakes
Instructions
- Preheat your oven to 425°F (220°C) and let it fully heat for about 15 minutes.
- Cut the potatoes into 1-inch chunks, rinse under cold water to remove excess starch, and pat dry thoroughly.
- In a large mixing bowl, toss the potatoes with olive oil, kosher salt, and black pepper. Add the whole garlic cloves and toss gently to combine. Add smoked paprika or chili flakes if using.
- Spread the potatoes and garlic evenly on a rimmed baking sheet in a single layer, avoiding overcrowding.
- Roast in the preheated oven for 25 minutes. Flip the potatoes and garlic halfway through (around 12-13 minutes) using a spatula or tongs.
- Check for doneness after 25 minutes; potatoes should be golden brown and crisp outside, tender inside. Roast an additional 5-10 minutes if needed.
- Remove from oven and immediately sprinkle with fresh chopped rosemary, thyme, and parsley. Toss gently to distribute herbs.
- Serve warm.
Notes
Do not overcrowd the pan to ensure crispiness. Dry potatoes thoroughly before roasting to avoid sogginess. Flip potatoes halfway through roasting for even browning. Add fresh herbs after roasting to preserve their bright flavor. Roasting whole garlic cloves mellows their flavor and adds sweetness.
