  • 1 can (10.5 oz / 298 g) cream of chicken soup
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • Optional: 1/4 cup (25 g) green onions, chopped

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Melt 6 tablespoons (85 g) of unsalted butter in a small saucepan or microwave-safe bowl until just melted but not browned. Set aside to cool slightly.
  3. In a large mixing bowl, combine thawed shredded hash browns, shredded sharp cheddar cheese, sour cream, and cream of chicken soup. Stir gently to coat everything without mashing.
  4. Add onion powder, garlic powder, salt, and freshly ground black pepper to the mixture and mix evenly.
  5. Fold in chopped green onions if using.
  6. Grease a 9×13 inch baking dish thoroughly with some of the melted butter, covering the bottom and sides.
  7. Pour the hash brown mixture into the prepared baking dish and spread evenly.
  8. Drizzle the remaining melted butter evenly over the top of the casserole.
  9. Sprinkle an additional 1/2 cup (50 g) shredded cheddar cheese over the top.
  10. Bake uncovered for 45 to 50 minutes until the edges are bubbly and the top is golden brown and crispy.
  11. Check doneness by inserting a fork in the center; it should go through easily and the casserole should be hot and bubbly. Tent with foil if browning too quickly and continue baking.
  12. Let the casserole rest for 5 to 10 minutes before serving to set.
