Ingredients

- Pinch of salt
- 1 tbsp water (optional, to thin batter)
- Fortune slips (pre-written or custom messages)
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
- Whisk the egg whites in a medium bowl until frothy but not stiff.
- In a separate bowl, combine sifted flour, sugar, and salt. Stir until evenly mixed.
- Slowly add melted butter, vanilla extract, and toasted sesame oil to the dry ingredients, stirring gently to combine.
- Fold in the egg whites gradually, mixing carefully until you get a smooth, thin batter. Add water if batter is too thick.
- Spoon about 1 tablespoon of batter onto the baking sheet. Spread into a thin 3-4 inch circle quickly.
- Bake for 7-8 minutes or until edges turn golden brown. Watch carefully to avoid burning.
- Remove one cookie at a time from the oven. Place a fortune slip in the center, fold the cookie in half, pinch edges, and bend over a cup rim for shape.
- Place shaped cookies in a muffin tin or egg carton to cool and set their shape.
- Repeat with remaining batter, covering batter with a damp towel between batches to prevent hardening.
Notes
Work quickly when spreading batter and shaping cookies as they cool and become brittle fast. If cookies cool too much before shaping, warm them in the oven for 10-15 seconds to soften. Avoid overcrowding the baking sheet and bake in batches. For dairy-free, substitute butter with melted coconut oil. For gluten-free, use almond flour or gluten-free flour blend.
