Ingredients
- 1 pound large shrimp, peeled and deveined

- 1 large egg, beaten

- 1/3 cup mayonnaise
- 2 tablespoons condensed milk

Instructions
- Toast the walnuts in a dry skillet over medium heat for 3-4 minutes until fragrant and lightly browned. Set aside to cool.
- Pat shrimp dry with paper towels to remove moisture.
- In a bowl, combine all-purpose flour and cornstarch. In another bowl, beat the egg.
- Dip each shrimp into the beaten egg, then dredge thoroughly in the flour-cornstarch mixture, pressing gently to adhere the coating evenly.
- Pour vegetable oil into a deep pan to about 2 inches depth and heat to 350°F (175°C).
- Fry shrimp in batches for 2-3 minutes or until golden and crispy. Remove with tongs or slotted spoon and drain on paper towels.
- In a small bowl, whisk together mayonnaise, honey, condensed milk, lemon juice, and salt until smooth. Adjust sweetness or tang as desired.
- In a large bowl, gently combine fried shrimp and toasted walnuts. Drizzle with creamy mayo sauce and toss lightly to coat without breaking the crispy coating.
- Serve immediately, garnished with chopped herbs if desired.
