Ingredients

Instructions
- Preheat your oven to 425°F (220°C). If using a skillet, have it ready on medium heat.
- Slice the potatoes thinly (about 1/8 inch thick). Rinse slices in cold water to remove excess starch, then pat dry thoroughly with paper towels.
- Toss the potato slices in a large bowl with olive oil, salt, and freshly ground black pepper until lightly coated.
- Spread the potatoes evenly on a parchment-lined baking sheet in a single layer, avoiding overlap.
- Bake for 20-25 minutes, flipping halfway through, until golden and crisp around the edges. Watch closely after 15 minutes to prevent burning.
- While potatoes bake, cook bacon in a skillet over medium heat until crispy (about 8-10 minutes). Drain on paper towels and crumble or chop into bite-sized pieces.
- Remove potatoes from oven and sprinkle shredded sharp cheddar and mozzarella evenly over the top, then scatter crispy bacon bits.
- Return to oven for 5-7 minutes until cheese is melted and bubbly. For a golden crust, broil for 1-2 minutes, watching carefully to avoid burning.
- Remove from oven, garnish with chopped green onions or chives, and serve immediately with sour cream on the side.
