Ingredients
- 4 slices sturdy sandwich bread (sourdough or good-quality white bread preferred)
- 2–3 fresh jalapenos, seeded and roasted
- 4 oz (115 g) softened cream cheese (full-fat or dairy-free coconut cream cheese)
- 1 cup (100 g) shredded sharp cheddar cheese
- 2 tablespoons unsalted butter, softened
- 1/2 teaspoon garlic powder (optional)
- 1/4 teaspoon onion powder (optional)
- Salt and pepper to taste
Instructions
- Preheat your oven broiler on high. Place the seeded jalapenos on a baking sheet and roast for about 5-7 minutes, turning occasionally, until the skins blister and char slightly. Remove and let cool, then chop finely.
- In a medium bowl, combine the softened cream cheese, shredded cheddar, chopped roasted jalapenos, garlic powder, onion powder, salt, and pepper. Stir until well blended and creamy. Taste and adjust seasoning if needed.
- Butter one side of each slice of bread evenly. This will be the outside that gets toasted.
- Place two slices of bread butter-side down on a clean surface. Spread the jalapeno-cheese mixture evenly over each. Top with the remaining bread slices, butter-side up.
- Heat your skillet or cast iron pan over medium heat. Place one sandwich at a time in the pan. Cook for about 3-4 minutes per side or until the bread is golden brown and crispy, and the cheese inside is melted and bubbly. Press down gently with a spatula to help everything meld together.
- Slice the sandwich diagonally and serve immediately while hot.
