  • 3 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and halve the fingerling potatoes lengthwise. Pat dry with a kitchen towel.
  3. Slice the kielbasa into ½-inch rounds. Prick casing if thick to prevent bursting.
  4. Slice bell peppers into strips and thinly slice the red onion. Mince the garlic cloves.
  5. In a large mixing bowl, combine potatoes, kielbasa, bell peppers, onion, and garlic. Drizzle with olive oil.
  6. Add smoked paprika, dried thyme, salt, and freshly ground black pepper. Toss thoroughly to coat evenly.
  7. Spread the mixture evenly onto a large rimmed sheet pan in a single layer.
  8. Roast in the preheated oven for 30-35 minutes, flipping the kielbasa and potatoes halfway through (around 15-18 minutes).
  9. Check for doneness: potatoes should be tender with golden, crispy edges; kielbasa should be browned and caramelized.
  10. Remove from oven and sprinkle chopped fresh parsley on top.
  11. Serve immediately, optionally with a green salad or crusty bread.
