  • 4 bone-in, skin-on chicken thighs (about 1.5 pounds / 700 grams)
  • 3 tablespoons freshly squeezed lemon juice (from 1 large lemon)
  • Zest of 1 lemon
  • 2 tablespoons fresh rosemary, finely chopped
  • 2 tablespoons fresh thyme leaves
  • 2 tablespoons fresh parsley, chopped
  • 3 cloves garlic, minced
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • Pinch of red pepper flakes (optional)

Instructions

  1. In a mixing bowl, combine lemon juice, lemon zest, minced garlic, chopped rosemary, thyme, parsley, olive oil, salt, pepper, and red pepper flakes if using. Whisk gently to blend.
  2. Pat chicken thighs dry with paper towels. Place them skin-side up in the bowl or a zip-top bag and coat thoroughly with the marinade. Cover and refrigerate for at least 20 minutes, up to 2 hours.
  3. Preheat grill or indoor grill pan over medium-high heat for 5-10 minutes.
  4. Place chicken thighs skin-side down on the grill. Cook undisturbed for 8-10 minutes until skin is golden and crispy.
  5. Flip the thighs and grill the other side for 7-9 minutes until internal temperature reaches 165°F (74°C).
  6. Remove chicken from grill and let rest on a plate tented loosely with foil for 5 minutes.
  7. Serve warm, garnished with extra fresh herbs or lemon wedges if desired.

Notes

Pat chicken dry before marinating to ensure crispy skin. Avoid flipping chicken too often to allow proper browning. Use bone-in, skin-on thighs for juiciness and crispiness. If flare-ups occur, move chicken to cooler part of grill. Rest chicken after grilling to redistribute juices.
