Ingredients
- 1.5 lbs sirloin steak, cut into 1-inch cubes (ribeye or strip steak works too)
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1/2 tsp smoked paprika
- 1/4 tsp garlic powder
- 1 tbsp olive oil (for searing)
- 1 lb baby potatoes, halved (Yukon gold or red potatoes preferred)
- 1 tbsp olive oil
- 1/2 tsp kosher salt
- 1/4 tsp ground black pepper
- 1/2 tsp dried thyme (or Italian seasoning)
- 3 tbsp unsalted butter, divided
- 5 cloves garlic, minced
- 2 tbsp fresh parsley, chopped (optional)
- 1/4 cup grated parmesan cheese (optional)
- Flaky sea salt (for serving)
Instructions
- Pat steak cubes dry with paper towels. Toss with 1 tsp kosher salt, 1/2 tsp black pepper, 1/2 tsp smoked paprika, and 1/4 tsp garlic powder. Set aside.
- Halve baby potatoes and toss with 1 tbsp olive oil, 1/2 tsp kosher salt, 1/4 tsp ground black pepper, and 1/2 tsp dried thyme in a mixing bowl.
- Heat a large skillet over medium-high heat. Add 1 tbsp olive oil and swirl to coat. Place potatoes cut side down and cook for 10-12 minutes, flipping once, until golden and crispy. Remove potatoes to a plate and keep warm.
- Add 1 tbsp butter to the same pan. Increase heat to high. Add steak cubes in a single layer (work in batches if needed). Sear for 2-3 minutes per side until deeply browned. Remove steak bites and set aside.
- Reduce heat to medium. Add remaining 2 tbsp butter to the pan. Stir in minced garlic and cook for 1 minute until fragrant, scraping up browned bits.
- Return potatoes and steak bites to the pan. Toss gently to coat with garlic butter. Sprinkle with fresh parsley and parmesan cheese if desired. Cook for another 2 minutes, stirring to glaze everything.
- Taste and adjust seasoning. Sprinkle with flaky sea salt before serving.

For best results, use a cast iron skillet and pat steak cubes dry before searing. Don’t overcrowd the pan to ensure crispiness. Garlic burns quickly, so add it after steak and potatoes are cooked. Let steak bites rest briefly before combining for juiciness.
