Ingredients
- 1 pound fresh asparagus (about 450 grams)
- 2 tablespoons extra virgin olive oil
- 1/2 cup grated Parmesan cheese (about 50 grams)
- 1/2 teaspoon garlic powder
- Salt to taste
- Freshly ground black pepper to taste
- Optional: lemon zest from 1 lemon
Instructions
- Preheat your oven to 425°F (220°C).
- Wash and trim the asparagus by snapping or cutting off the tough, woody ends (about 1 to 2 inches).
- In a large bowl, toss the asparagus with olive oil, garlic powder, salt, and pepper until evenly coated.
- Arrange the asparagus in a single layer on a rimmed baking sheet, leaving space between stalks.
- Sprinkle the grated Parmesan evenly over the asparagus.
- Roast in the oven for 12-15 minutes, checking after 10 minutes. The asparagus should be tender and the Parmesan golden and crispy.
- Optional: zest a lemon and squeeze fresh lemon juice over the asparagus once out of the oven.
- Serve immediately to enjoy the crispy Parmesan crust at its best.
Notes
Use freshly grated Parmesan for the best crispy crust. Avoid overcrowding the pan to prevent steaming. If Parmesan isn’t crisping well, increase oven temperature slightly or broil for 1-2 minutes while watching carefully. You can prep asparagus ahead by trimming and tossing with oil and seasonings, then add Parmesan just before roasting. For leftovers, reheat in an oven or toaster oven to restore crispiness; avoid microwaving.
