  • 10 cups (2.5 liters) water (for boiling bath)
  • 2/3 cup (160 g) baking soda (for boiling bath)
  • 1 large egg, beaten with 1 tablespoon water (egg wash)
  • Coarse sea salt, for sprinkling
  • 2 tablespoons unsalted butter (for cheese sauce)
  • 2 tablespoons all-purpose flour (for cheese sauce)
  • 1 cup (240 ml) whole milk, warmed (or dairy-free milk)
  • 1 ½ cups (170 g) shredded sharp cheddar cheese
  • 2 ounces (56 g) cream cheese, softened
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste

Instructions

  1. Activate the yeast: In a large bowl, combine warm water (110°F/43°C) and sugar. Sprinkle yeast over the top and let sit for 5 minutes until foamy.
  2. Make the dough: Add melted butter, flour, and kosher salt to the yeast mixture. Stir with a wooden spoon or mix on low with a dough hook until combined.
  3. Knead the dough: Turn dough onto a floured surface and knead for about 8 minutes until smooth and elastic. If using a stand mixer, knead for 5 minutes on medium.
  4. First rise: Place dough in a lightly oiled bowl, cover, and let rise in a warm spot for 1 hour or until doubled in size.
  5. Preheat oven to 450°F (230°C). Line two baking sheets with parchment paper or silicone mats.
  6. Prepare baking soda bath: In a large pot, bring 10 cups water and baking soda to a rolling boil.
  7. Shape pretzel bites: Punch down dough, roll into a 1-inch thick rope, and cut into 1-inch pieces.
  8. Boil bites: Drop 6-8 pretzel bites into boiling baking soda water at a time. Boil for 30 seconds, then remove and place on baking sheet.
