  • 4 ounces cream cheese, softened
  • 1/2 cup beer (lager or ale)
  • 1/4 cup whole milk
  • 1/2 teaspoon smoked paprika (optional)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground mustard
  • Kosher salt (to taste)
  • Black pepper (to taste)

Instructions

  1. Pour warm water into a large mixing bowl. Sprinkle active dry yeast and brown sugar over the water. Let sit until foamy, about 5 minutes.
  2. Stir in all-purpose flour, kosher salt, and melted butter. Mix until a shaggy dough forms. Knead by hand or with a dough hook for 5-7 minutes until smooth and elastic.
  3. Cover the bowl with a towel and let the dough rise in a warm spot for 30 minutes, or until doubled in size.
  4. Turn the dough out onto a lightly floured surface. Roll into ropes about 1/2-inch thick, then slice into 1-inch pieces.
  5. Preheat oven to 425°F. In a large pot, bring 6 cups water to a boil. Carefully add baking soda. Drop pretzel bites in batches into the bath for 20-30 seconds, then remove with a slotted spoon and place on a parchment-lined baking sheet.
  6. Brush each bite with melted butter or egg wash. Sprinkle coarse salt on top. Bake for 12-15 minutes until deep golden brown and crisp on the outside. Rotate the pan halfway for even browning.
  7. In a medium saucepan, combine cream cheese and beer. Heat over medium, whisking until smooth. Add shredded cheddar, whole milk, smoked paprika, garlic powder, ground mustard, and a pinch of salt and black pepper. Stir until melted and silky.
