Ingredients
- 1 pound garlic scapes, trimmed and cut into 3–4 inch pieces
- 2 tablespoons extra virgin olive oil
- ½ cup grated Parmesan cheese
- Zest of 1 medium lemon
- ¾ teaspoon sea salt
- ¼ teaspoon freshly cracked black pepper (optional)
Instructions
- Preheat your oven to 425°F (220°C).
- Rinse the garlic scapes under cold water and pat dry thoroughly. Trim off the harder ends, then cut into 3-4 inch pieces.
- In a large mixing bowl, toss the scapes with olive oil, sea salt, and black pepper if using, ensuring even coating.
- Sprinkle the grated Parmesan over the oiled scapes and toss gently to combine.
- Spread the garlic scapes in a single layer on a parchment-lined or lightly greased baking sheet, avoiding overcrowding.
- Roast in the oven for 12-15 minutes, flipping halfway through to ensure even browning. Watch closely to avoid burning.
- Immediately after removing from the oven, sprinkle the lemon zest evenly over the hot scapes.
- Serve warm and crispy immediately.
