  • 1 cup mini marshmallows
  • 1 cup freeze-dried fruit (strawberries, raspberries, or apples)
  • 1/2 cup mini chocolate candies (M&M’s, Skittles, or Sixlets, rainbow colors)
  • 1/4 cup green candy-coated chocolate pieces (optional)
  • 8 ounces vanilla candy melts or white chocolate chips
  • 2 teaspoons coconut oil (to thin chocolate, optional)
  • Assorted rainbow sprinkles

Instructions

  1. Pop the popcorn: If using kernels, heat 2 tablespoons coconut oil in a large pot over medium heat. Add 1/2 cup popcorn kernels, cover, and shake every 30 seconds until popping slows. Remove from heat, pour into a large bowl, and sprinkle with 1/2 teaspoon sea salt. If using microwave popcorn, pop according to package directions and pick out any unpopped kernels.
  2. Prep the rainbow add-ins: Roughly chop freeze-dried fruit if pieces are large. Set aside 1/2 cup for sprinkling at the end. Measure out marshmallows, rainbow candies, and green candies.
  3. Make the sweet drizzle: Combine vanilla candy melts or white chocolate chips with coconut oil in a microwave-safe bowl. Microwave in 30-second bursts, stirring after each, until smooth (about 1–2 minutes).
  4. Assemble the popcorn snack: Pour popcorn into a large mixing bowl. Toss in marshmallows, most of the freeze-dried fruit, and half the rainbow candies. Drizzle the melted candy coating evenly over the mixture, then gently fold with a spatula until well coated.
  5. Spread and decorate: Transfer the mixture to a parchment-lined baking sheet. While still wet, sprinkle on the remaining freeze-dried fruit, rainbow candies, and all the sprinkles. Press in extra marshmallows or green candies if desired.
  6. Let set and serve: Allow the popcorn to set at room temperature for 10–15 minutes, or until the coating is firm. Break into clusters and serve in bowls, cellophane bags, or cupcake liners.

Notes

Use fresh popcorn and let it cool completely before coating to keep it crispy. Work quickly when mixing in the melted chocolate to ensure even coating.
