Description

  • 2 cups all-purpose flour
  • 1 cup unsalted butter, cold and cubed
  • 1/2 teaspoon salt
  • 2 tablespoons granulated sugar
  • 68 tablespoons ice water
  • 1 cup fresh strawberries, hulled and finely chopped (or frozen/jam)
  • 1/4 cup strawberry jam
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon juice
  • 2 tablespoons granulated sugar (for filling)
  • 1 large egg, beaten (for brushing and sealing)
  • Extra sugar for sprinkling
  • 1 cup powdered sugar
  • 23 tablespoons whole milk (or dairy-free milk)
  • 1/2 teaspoon vanilla extract
  • Pinch of salt (for glaze)

Instructions

  1. In a large bowl, combine flour, sugar, and salt. Add cold, cubed butter and work into the flour until mixture resembles coarse crumbs.
  2. Drizzle in ice water, stirring gently, until dough just comes together. Divide dough in half, wrap in plastic, and chill for at least 30 minutes.
  3. While dough chills, stir together chopped strawberries, strawberry jam, cornstarch, sugar, and lemon juice in a small bowl. Let sit for 10 minutes.
  4. Flour your work surface. Roll out one dough half to about 1/8-inch thick. Cut out as many hearts as possible with a 3-4 inch cutter. Gather scraps, re-roll, and cut more hearts. Repeat with second dough half for a total of 16 hearts.
  5. Place half the hearts on a parchment-lined baking sheet. Spoon about 1 tablespoon of strawberry filling onto each, leaving a 1/4-inch border. Brush edges lightly with beaten egg. Top with another heart and press edges to seal. Crimp edges with a fork.
  6. Chill assembled pies on the baking sheet for 10 minutes. Preheat oven to 400°F.
  7. Brush tops with remaining egg, sprinkle with sugar, and cut a tiny slit or poke with a fork for steam to escape.
  8. Bake for 18-22 minutes, until pies are golden and filling is bubbling.
  9. Transfer pies to a wire rack and let cool for 10-15 minutes.
  10. In a small bowl, whisk powdered sugar, milk, vanilla extract, and a pinch of salt until glaze is thick but pourable. Drizzle or spread over cooled pies.
  11. Let glaze set for 5 minutes. Serve warm or at room temperature.

Notes

Keep butter and dough cold for the flakiest pastry. Don’t overfill pies to prevent leaks. For gluten-free, use a GF flour blend; for vegan, use non-dairy butter and milk and skip the egg wash. Pies can be made ahead and frozen unbaked. Try other fruit fillings for variety.
