Ingredients
Scale
- 2 medium sweet potatoes, peeled and roasted
- 1 cup cooked lentils (brown or green lentils)
- 1/2 cup plain breadcrumbs (or gluten-free breadcrumbs)
- 1 large egg (or flax egg for vegan alternative)
- 1/2 cup finely chopped onion
- 2 cloves garlic, minced
- 1 tsp smoked paprika
- 1/2 tsp cumin
- Pinch of cayenne pepper
- Salt and pepper to taste
- 2–3 tablespoons olive oil for frying
- 1 ripe avocado
- 1 tablespoon lime juice
- 2 tablespoons Greek yogurt (or dairy-free yogurt)
- 1/4 teaspoon garlic powder
- Salt to taste
Instructions
- Preheat oven to 400°F (200°C). Peel and chop sweet potatoes into chunks, place on a baking sheet, drizzle with olive oil, and roast for 25-30 minutes until tender.
- Cook lentils according to package instructions, drain, and let cool slightly.
- In a large mixing bowl, combine roasted sweet potatoes, cooked lentils, breadcrumbs, egg, onion, garlic, smoked paprika, cumin, cayenne, salt, and pepper. Mash until well combined or pulse in a food processor.
- Scoop out about 2 tablespoons of the mixture and shape into patties. You should get around 10-12 patties.
- Heat a non-stick skillet over medium heat, add olive oil, and cook patties in batches for 3-4 minutes per side until golden and crispy.
- In a small bowl, mash avocado and mix with lime juice, Greek yogurt, garlic powder, and salt until smooth.
- Serve patties warm with avocado sauce drizzled on top or on the side.
