Description

  • 2 medium sweet potatoes, peeled and roasted
  • 1 cup cooked lentils (brown or green lentils)
  • 1/2 cup plain breadcrumbs (or gluten-free breadcrumbs)
  • 1 large egg (or flax egg for vegan alternative)
  • 1/2 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1/2 tsp cumin
  • Pinch of cayenne pepper
  • Salt and pepper to taste
  • 23 tablespoons olive oil for frying
  • 1 ripe avocado
  • 1 tablespoon lime juice
  • 2 tablespoons Greek yogurt (or dairy-free yogurt)
  • 1/4 teaspoon garlic powder
  • Salt to taste

Instructions

  1. Preheat oven to 400°F (200°C). Peel and chop sweet potatoes into chunks, place on a baking sheet, drizzle with olive oil, and roast for 25-30 minutes until tender.
  2. Cook lentils according to package instructions, drain, and let cool slightly.
  3. In a large mixing bowl, combine roasted sweet potatoes, cooked lentils, breadcrumbs, egg, onion, garlic, smoked paprika, cumin, cayenne, salt, and pepper. Mash until well combined or pulse in a food processor.
  4. Scoop out about 2 tablespoons of the mixture and shape into patties. You should get around 10-12 patties.
  5. Heat a non-stick skillet over medium heat, add olive oil, and cook patties in batches for 3-4 minutes per side until golden and crispy.
  6. In a small bowl, mash avocado and mix with lime juice, Greek yogurt, garlic powder, and salt until smooth.
  7. Serve patties warm with avocado sauce drizzled on top or on the side.
