These decadent chocolate-dipped strawberry cheesecake bites combine creamy cheesecake, fresh strawberries, and a crisp chocolate shell for a perfect party treat that’s quick and easy to make.


Ingredients

  • 8 oz (225 g) cream cheese, softened
  • 1/4 cup (50 g) granulated sugar
  • 1 tsp vanilla extract
  • 1/2 cup (120 ml) heavy cream, cold
  • 20 medium fresh strawberries, hulled and dried thoroughly
  • 8 oz (225 g) semi-sweet chocolate chips or baking chocolate
  • 1 tsp coconut oil or vegetable oil

Instructions

  1. Rinse and dry the strawberries thoroughly with paper towels. Set aside on a plate.
  2. In a large bowl, beat the softened cream cheese and granulated sugar together until smooth and creamy, about 2 to 3 minutes with an electric mixer at medium speed. Scrape down the sides as needed.
  3. Mix in the vanilla extract until evenly combined.
  4. In a separate chilled bowl, whip the cold heavy cream until stiff peaks form, about 3 to 5 minutes on high speed.
  5. Gently fold the whipped cream into the cream cheese mixture using a spatula, being careful not to overmix.
  6. Using a small cookie scoop or spoon, place a dollop of cheesecake filling on top of each strawberry, smoothing it slightly. Place the assembled strawberries on a parchment-lined baking sheet.
  7. Chill the tray in the refrigerator for at least 30 minutes to let the cheesecake set firmly.
  8. Combine the chocolate chips and coconut oil in a microwave-safe bowl. Heat in 20-second intervals, stirring well after each, until smooth and glossy. Alternatively, melt over a double boiler.
  9. Holding the strawberry by the green stem or using a toothpick, dip each cheesecake-topped strawberry into the melted chocolate, covering about two-thirds or the entire bite. Let excess chocolate drip off.
  10. Place the dipped bites back onto the parchment-lined tray and refrigerate for 15 to 20 minutes until the chocolate hardens.
  11. Take the bites out about 10 minutes before serving for the best texture.

Notes

Do not microwave cream cheese to soften; leave it at room temperature for 30 minutes. Use cold heavy cream and chill the mixing bowl for best whipping results. Dry strawberries thoroughly to prevent chocolate from seizing. Melt chocolate slowly and stir often to avoid burning. Chill cheesecake bites before dipping and after dipping to keep shape and crisp chocolate shell. Reheat chocolate gently if it thickens during dipping.
