Ingredients
- 1 ½ cups (150g) graham cracker crumbs or digestive biscuits, finely crushed
- 5 tablespoons (70g) unsalted butter, melted
- 2 tablespoons (25g) granulated sugar
- 24 oz (680g) cream cheese, softened
- 1 cup (200g) granulated sugar
- 3 large eggs, room temperature
- 1 teaspoon pure vanilla extract
- ½ cup (120ml) sour cream
- 2 tablespoons (15g) all-purpose flour
- ½ cup (90g) semisweet chocolate chips or chopped chocolate
- 2 tablespoons (30ml) heavy cream
Instructions
- Preheat oven to 325°F (160°C). In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Mix until crumbs resemble wet sand. Press firmly into bottom of 9-inch springform pan. Bake 10 minutes and set aside to cool.
- In a large bowl, beat softened cream cheese with sugar until smooth and creamy (3-4 minutes). Add eggs one at a time, mixing well after each. Stir in vanilla extract, sour cream, and flour until fully incorporated.
- Melt chocolate chips with heavy cream in a small saucepan over low heat or microwave-safe bowl until smooth. Let cool slightly.
- Pour two-thirds of cheesecake batter over cooled crust. Drop spoonfuls of melted chocolate on top. Pour remaining batter over chocolate dollops. Use a toothpick or knife to gently swirl chocolate through batter in a figure-eight motion.
- Bake cheesecake at 325°F (160°C) for 50-60 minutes until edges are set but center jiggles slightly.
- Cool cheesecake gradually in oven with door cracked for about 1 hour. Then chill in refrigerator for at least 4 hours or overnight.
- Run a warm, wet knife around edges before removing springform pan. Slice and serve.
