  • 1 cup chopped almonds, toasted
  • 1 cup dried cherries

Instructions

  1. Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  2. Spread the almonds on a baking sheet and toast for 5–7 minutes. Let cool, then chop finely.
  3. In a large bowl, cream the butter, granulated sugar, and brown sugar until light and fluffy (about 2–3 minutes). Add the egg and almond extract, mixing until combined.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Fold in the toasted almonds and dried cherries.
  6. Scoop out tablespoon-sized portions of dough and roll into balls. Place them 2 inches apart on the prepared baking sheets.
  7. Bake for 10–12 minutes, or until the edges are golden. Don’t overbake—the centers should look slightly underdone.
  8. Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

Chill the dough for 30 minutes if it feels too sticky. Add a tablespoon of flour if cookies spread too much. Toasting the almonds enhances their flavor and adds crunch.
