These almond cherry cookies are buttery, nutty, and bursting with the tart sweetness of cherries, making them a perfect holiday treat.

- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1 large egg
- 1 teaspoon pure almond extract
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup chopped almonds, toasted
- 1 cup dried cherries
Instructions
- Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
- Spread the almonds on a baking sheet and toast for 5–7 minutes. Let cool, then chop finely.
- In a large bowl, cream the butter, granulated sugar, and brown sugar until light and fluffy (about 2–3 minutes). Add the egg and almond extract, mixing until combined.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Fold in the toasted almonds and dried cherries.
- Scoop out tablespoon-sized portions of dough and roll into balls. Place them 2 inches apart on the prepared baking sheets.
- Bake for 10–12 minutes, or until the edges are golden. Don’t overbake—the centers should look slightly underdone.
- Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
Chill the dough for 30 minutes if it feels too sticky. Add a tablespoon of flour if cookies spread too much. Toasting the almonds enhances their flavor and adds crunch.
