- 8 ounces (225 grams) cream cheese, softened to room temperature

- 1 teaspoon mint extract (adjust to taste)
- 12 ounces (340 grams) semi-sweet chocolate chips
- 1 tablespoon (15 ml) vegetable oil or coconut oil (optional for smoother chocolate coating)
Instructions
- Crush the Mint Oreo cookies in a food processor until fine crumbs form (about 1 minute). Alternatively, place cookies in a sealed bag and crush with a rolling pin until finely ground.
- In a large bowl, beat the softened cream cheese until smooth using an electric mixer or whisk. Add sifted cocoa powder, powdered sugar, and mint extract. Mix until fully combined and silky smooth.
- Slowly add the crushed Oreo crumbs to the cream cheese mixture. Stir gently with a spatula until the crumbs are evenly coated and the mixture holds together like dough. Add a little more cream cheese if too crumbly.
- Using a small cookie scoop or spoon, portion the mixture into 1-inch balls. Roll between palms to smooth and place on a parchment-lined baking sheet. Chill in the fridge for at least 30 minutes to firm up.
- Melt the semi-sweet chocolate chips with the vegetable or coconut oil in a microwave-safe bowl or double boiler, stirring frequently until smooth and glossy.
- Dip each chilled truffle into the melted chocolate using a toothpick or fork, letting excess drip off. Place back on parchment paper. Optionally, add sprinkles or crushed Oreos on top before chocolate sets.
- Chill the dipped truffles in the fridge for at least 1 hour to set completely before serving.
