Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving an overhang for easy lifting. Lightly grease the paper or spray the pan if skipping parchment.
  2. In a medium bowl, whisk together melted butter and sugar until glossy and well combined, about 1 minute. Add eggs and vanilla extract, whisking until smooth and pale.
  3. Sift in cocoa powder, flour, and salt. Gently fold with a spatula until just combined—do not overmix.
  4. Pour the brownie batter into the prepared pan and smooth the top with a spatula.
  5. In a small bowl, blend cream cheese and sugar with a hand mixer (or whisk) until creamy and lump-free, about 1 minute. Add egg yolk and vanilla, mixing until just combined.
  6. Stir in blue gel food coloring, a little at a time, until you reach a bright blue color.
  7. Dollop spoonfuls of the blue cream cheese mixture over the brownie batter. Use a butter knife or skewer to gently swirl the blue through the chocolate, making big S-shapes or zigzags.
  8. Bake on the middle rack for 28–32 minutes, or until a toothpick inserted in the center comes out with moist crumbs (not wet batter).
  9. Let brownies cool completely in the pan on a wire rack—at least 1 hour. Use the parchment overhang to lift them out.
  10. For clean slices, chill in the fridge for 30 minutes before cutting with a sharp knife, wiping the blade between cuts.

Notes

Use gel food coloring for vibrant swirls; avoid liquid coloring. Don’t over-swirl or the colors will blend. Room temperature ingredients help with smooth mixing.
