Ingredients
- 1/2 cup unsalted butter, melted and cooled slightly
- 1 cup granulated sugar
- 2 large eggs, room temperature

- 1/2 cup all-purpose flour
- 1/4 teaspoon salt
- 4 ounces cream cheese, softened

Instructions
- Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving an overhang for easy lifting. Lightly grease the paper or spray the pan if skipping parchment.
- In a medium bowl, whisk together melted butter and sugar until glossy and well combined, about 1 minute. Add eggs and vanilla extract, whisking until smooth and pale.
- Sift in cocoa powder, flour, and salt. Gently fold with a spatula until just combined—do not overmix.
- Pour the brownie batter into the prepared pan and smooth the top with a spatula.
- In a small bowl, blend cream cheese and sugar with a hand mixer (or whisk) until creamy and lump-free, about 1 minute. Add egg yolk and vanilla, mixing until just combined.
- Stir in blue gel food coloring, a little at a time, until you reach a bright blue color.
- Dollop spoonfuls of the blue cream cheese mixture over the brownie batter. Use a butter knife or skewer to gently swirl the blue through the chocolate, making big S-shapes or zigzags.
- Bake on the middle rack for 28–32 minutes, or until a toothpick inserted in the center comes out with moist crumbs (not wet batter).
- Let brownies cool completely in the pan on a wire rack—at least 1 hour. Use the parchment overhang to lift them out.
- For clean slices, chill in the fridge for 30 minutes before cutting with a sharp knife, wiping the blade between cuts.

Use gel food coloring for vibrant swirls; avoid liquid coloring. Don’t over-swirl or the colors will blend. Room temperature ingredients help with smooth mixing. For gluten-free, use a cup-for-cup gluten-free flour blend. For dairy-free, substitute vegan butter and cream cheese. Brownies taste even better on day two and can be frozen for up to 2 months.
