Description
These whimsical, pastel-swirled meltaway cookies are soft, buttery, and melt-in-your-mouth tender—perfect for magical parties, birthdays, or any day that needs a splash of color and joy. Easy to make with simple pantry staples, they’re a show-stopping treat inspired by the playful world of Dr. Seuss.
Ingredients
- 1 cup (226g) unsalted butter, softened
- 1 cup (120g) powdered sugar, plus more for dusting
- 1 1/2 cups (192g) all-purpose flour
- 1/2 cup (64g) cornstarch
- 2 teaspoons vanilla extract
- 1/4 teaspoon almond extract (optional)
- 1/4 teaspoon salt
- Gel food coloring (assorted colors: red, yellow, blue, green, purple, pink)
- Sprinkles (rainbow, pastel, or nonpareils, optional)
Instructions
- Preheat oven to 350°F (177°C). Line two baking sheets with parchment paper or silicone mats.
- Set out butter to soften if not already at room temperature. Gather and measure all ingredients.
- In a large mixing bowl, beat softened butter with powdered sugar using an electric mixer on low, then medium speed until pale, fluffy, and creamy (2-3 minutes). Scrape down sides as needed.
- Mix in vanilla extract, almond extract (if using), and salt until fully combined.
- Sift together all-purpose flour and cornstarch. Add to butter mixture in two parts, mixing on low until just combined. Do not overmix. Dough should be soft but not sticky.
- If dough feels dry, add a teaspoon of milk. If too sticky, sprinkle in a little more flour.
- Divide dough evenly into 4 to 6 small bowls (one for each color).
- Add 1-2 drops of gel food coloring to each bowl and gently mix with a clean spatula until desired pastel shade is reached. Use a fresh spatula for each color.
- Scoop about 1 tablespoon of each colored dough and gently press together in your hand, rolling just enough to form a ball with swirls. Do not over-roll.
- Place dough balls on prepared baking sheets, spacing about 2 inches apart. Top with sprinkles if desired.
- Bake for 10-12 minutes, until cookies are set but not browned. Look for slightly puffed centers and barely golden edges.
- Let cookies cool on the baking sheet for 3-4 minutes, then transfer to a wire rack to cool completely.
- Once cool, dust with extra powdered sugar if desired.
Notes
For best color, use gel food coloring and avoid overmixing the dough. Chill dough balls for 5-10 minutes if your kitchen is warm to help cookies hold their shape. These cookies are egg-free and can be made gluten-free or dairy-free with simple swaps. Store in an airtight container for up to 5 days or freeze for up to 2 months.
