  • 1/4 teaspoon almond extract (optional)
  • 1/4 teaspoon salt
  • Gel food coloring (assorted colors: red, yellow, blue, green, purple, pink)
  • Sprinkles (rainbow, pastel, or nonpareils, optional)

Instructions

  1. Preheat oven to 350°F (177°C). Line two baking sheets with parchment paper or silicone mats.
  2. Set out butter to soften if not already at room temperature. Gather and measure all ingredients.
  3. In a large mixing bowl, beat softened butter with powdered sugar using an electric mixer on low, then medium speed until pale, fluffy, and creamy (2-3 minutes). Scrape down sides as needed.
  4. Mix in vanilla extract, almond extract (if using), and salt until fully combined.
  5. Sift together all-purpose flour and cornstarch. Add to butter mixture in two parts, mixing on low until just combined. Do not overmix. Dough should be soft but not sticky.
  6. If dough feels dry, add a teaspoon of milk. If too sticky, sprinkle in a little more flour.
  7. Divide dough evenly into 4 to 6 small bowls (one for each color).
  8. Add 1-2 drops of gel food coloring to each bowl and gently mix with a clean spatula until desired pastel shade is reached. Use a fresh spatula for each color.
  9. Scoop about 1 tablespoon of each colored dough and gently press together in your hand, rolling just enough to form a ball with swirls. Do not over-roll.
  10. Place dough balls on prepared baking sheets, spacing about 2 inches apart. Top with sprinkles if desired.
  11. Bake for 10-12 minutes, until cookies are set but not browned. Look for slightly puffed centers and barely golden edges.
  12. Let cookies cool on the baking sheet for 3-4 minutes, then transfer to a wire rack to cool completely.
  13. Once cool, dust with extra powdered sugar if desired.

Notes

For best color, use gel food coloring and avoid overmixing the dough. Chill dough balls for 5-10 minutes if your kitchen is warm to help cookies hold their shape.
