  • 1 1/4 cups (300ml) warm water (about 110°F/43°C)
  • 2 tablespoons (30g) honey (or sugar or maple syrup)
  • 3 1/2 cups (440g) bread flour (or all-purpose flour)
  • 1 teaspoon (6g) kosher salt
  • Gel food coloring in red, blue, yellow, and green
  • 8 cups (2L) water (for boiling)
  • 2 tablespoons (24g) baking soda (for boiling)
  • 1 egg, beaten (for egg wash, or non-dairy milk for vegan)
  • Sprinkles, sesame seeds, or poppy seeds (optional, for topping)

Instructions

  1. In a large mixing bowl, combine warm water and honey. Stir until dissolved. Sprinkle yeast over the top and let sit for about 5 minutes, until foamy.
  2. Add bread flour and salt to the bowl. Stir with a wooden spoon or mixer on low until a shaggy dough forms. If sticky, add another tablespoon of flour.
  3. Turn dough onto a floured countertop. Knead for 8 minutes by hand (or 5 minutes with a dough hook) until smooth and elastic.
  4. Divide dough into 4 equal pieces. Place each in a small bowl. Add a few drops of gel food coloring to each and knead until vibrant (wear gloves).
  5. Form each colored piece into a ball. Place all in a greased bowl, cover, and let rise somewhere warm for 30 minutes, until puffed.
  6. Pinch off a bit from each colored dough and stack together. Roll gently into a log, twist for swirls, then pinch ends to form a mini bagel (golf ball size).
  7. Place shaped bites on a parchment-lined baking sheet. Cover and let rise for 10 minutes.
  8. Preheat oven to 425°F (220°C). Bring 8 cups water and 2 tablespoons baking soda to a boil in a large pot.
  9. Drop a few bagel bites at a time into boiling water. Boil for 30 seconds per side. Remove with a slotted spoon and return to baking sheet.
  10. Brush each bite with beaten egg and sprinkle with toppings if using.
  11. Bake for 12–15 minutes, until puffed, shiny, and golden at the edges. Bottoms should sound hollow when tapped.
  12. Transfer to a wire rack and cool for at least 10 minutes before serving.

Notes

For best color, use gel food coloring and avoid overmixing. Boiling is essential for the classic bagel chew. For vegan, use agave or maple syrup and non-dairy milk wash. Bagel bites freeze well and can be reheated in the oven. Let kids help with shaping for extra fun.
