Ingredients
- 8 oz (225 g) cream cheese, softened (full-fat recommended)
- 12 oz (340 g) semi-sweet chocolate chips (can substitute dark or milk chocolate chips)
- 1/4 cup (50 g) colored sprinkles or decorative sugar (alternatively crushed freeze-dried strawberries or shredded coconut)
Instructions
- Soften the cream cheese by leaving it out at room temperature for about 30 minutes.
- Melt the chocolate chips in a microwave-safe bowl in 30-second bursts, stirring between each, until smooth. Alternatively, melt using a double boiler over simmering water.
- Add the softened cream cheese to the melted chocolate and stir vigorously until fully blended and smooth. If too stiff, add a tiny splash of milk.
- Cover the mixture and refrigerate for about 1 hour or until firm enough to scoop.
- Using a melon baller or teaspoon, scoop small portions and roll between palms to form egg-shaped balls.
- Roll each truffle in sprinkles or colored sugar to decorate.
- Place the decorated truffles on a parchment-lined tray and refrigerate for at least 30 minutes to set.
- Take truffles out about 10 minutes before serving to soften slightly and enhance flavor.
