Description
A quick and refreshing summer treat made with just three simple ingredients: frozen mixed berries, Greek yogurt, and honey or maple syrup. These popsicles are creamy, naturally sweet, and perfect for hot days.
Ingredients
- 2 cups (300 grams) frozen mixed berries (strawberries, blueberries, raspberries)
- 1 cup (240 ml) Greek yogurt (plain, full-fat preferred)
- 2 tablespoons (30 ml) honey or maple syrup
- Optional: 1 teaspoon (5 ml) fresh lemon juice
Instructions
- Measure out 2 cups (300 grams) of frozen mixed berries, 1 cup (240 ml) of Greek yogurt, and 2 tablespoons (30 ml) of honey or maple syrup. Prepare lemon juice if using.
- Add frozen berries to blender or food processor and pulse a few times to break them down slightly.
- Add Greek yogurt and honey or maple syrup to the blender. Blend until smooth, about 1 to 2 minutes.
- Check consistency: if too thick to pour, add about 1 tablespoon (15 ml) of water or juice and blend again; if too thin, add more frozen fruit or yogurt.
- Pour mixture into popsicle molds, leaving space at the top for expansion. Insert sticks and place molds on a baking sheet.
- Freeze for at least 4 to 6 hours or overnight until solid.
- To unmold, run warm water over the outside of the molds for 10 to 15 seconds and gently pull the sticks.
Notes
Use full-fat Greek yogurt for creamier texture. Avoid overblending to keep some fruit texture and prevent warming the mixture. Freeze molds on a baking tray for stability. Adjust sweetness to taste. For dairy-free, substitute yogurt with coconut or almond milk yogurt. Popsicles keep best up to 2 weeks in freezer.
