A no-cook, quick antipasto platter combining cured meats, cheeses, fresh and pickled veggies, perfect for hot summer days and effortless entertaining.
Ingredients
- Thinly sliced prosciutto
- Genoa salami
- Soppressata (high-quality, nitrate-free if possible)
- Fresh mozzarella balls (bocconcini), drained
- Aged provolone slices or wedges
- Parmesan shards
- Marinated artichoke hearts, drained
- Roasted red peppers (jarred or fresh roasted)
- Kalamata olives, pitted
- Green Castelvetrano olives, pitted
- Pepperoncini or mild pickled peppers (optional)
- Cherry tomatoes, halved or whole
- Cucumber slices or ribbons
- Fresh basil or oregano leaves for garnish
- Rustic baguette slices, toasted or fresh
- Assorted crackers or grissini breadsticks
- Extra virgin olive oil (for drizzling)
- Balsamic glaze or reduction (optional)
- Freshly cracked black pepper
- Flaky sea salt
Instructions
- Drain marinated veggies and fresh cheeses well. Slice cured meats thinly if not pre-sliced. Halve cherry tomatoes and slice cucumbers into ribbons using a vegetable peeler.
- Place small bowls or ramekins on the board for olives and artichoke hearts to keep things tidy.
- Arrange mozzarella balls in one cluster, fan out provolone slices nearby, and scatter Parmesan shards where there’s space.
- Fold and fan salami and prosciutto slices into small piles for easy grabbing.
- Fill gaps with cherry tomatoes, cucumber ribbons, and fresh herbs for color and freshness.
- Arrange baguette slices and crackers on one side or in a separate dish to prevent sogginess.
- Drizzle extra virgin olive oil and balsamic glaze over select spots. Sprinkle cracked black pepper and flaky sea salt lightly over cheeses and tomatoes.
- Serve immediately at room temperature. If assembling in advance, keep covered and refrigerated, then bring to room temperature before serving.
Notes
If fresh mozzarella is too watery, dab gently with a paper towel to avoid sogginess. Balance salty and mild flavors evenly across the board. Use small bowls for oily or wet ingredients to prevent soggy bread. Assemble chilled but serve at room temperature for best flavor. Prep ingredients in advance and assemble just before serving for convenience.
