Description

Ingredients

  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Salt and black pepper to taste
  • 1 tbsp olive oil
  • 15 oz ricotta cheese
  • 2 cups shredded mozzarella cheese, divided
  • ½ cup grated Parmesan cheese
  • 1 large egg, beaten
  • 2 tbsp fresh parsley, chopped (optional)
  • 912 no-boil lasagna noodles
  • Optional: 1 lb cooked ground beef or Italian sausage

Instructions

  1. Prepare the sauce: Heat olive oil in a skillet over medium heat. Sauté chopped onion until translucent, about 3-4 minutes. Add minced garlic and cook for 30 seconds until fragrant. Pour in crushed tomatoes, stir in dried basil, oregano, salt, and pepper. Simmer gently for 5 minutes, stirring occasionally. (Skip if using pre-made marinara sauce.)
  2. Mix the cheese filling: In a large bowl, combine ricotta, 1½ cups mozzarella, Parmesan, beaten egg, parsley, salt, and pepper. Stir until smooth and creamy. Add a splash of milk if mixture is too stiff.
  3. Optional meat prep: Brown ground beef or sausage in a skillet over medium heat until fully cooked. Drain excess fat and set aside.
  4. Layer the lasagna in the crockpot: Spread about ½ cup sauce on the bottom of the crockpot. Place 3-4 no-boil noodles over the sauce, breaking to fit if needed. Spread one-third of the cheese mixture over noodles, add one-third of the sauce and half of the cooked meat if using. Repeat layering two more times, finishing with a final layer of noodles and remaining sauce. Sprinkle remaining ½ cup mozzarella cheese evenly on top.
  5. Cook low and slow: Cover crockpot and cook on low for 4 to 5 hours. Avoid lifting lid too often. Check for bubbling sauce around edges after about 3 hours.
  6. Rest before serving: Turn off crockpot and let lasagna rest with lid off for 15-20 minutes to set and make slicing easier.

Notes

Do not skip the resting time after cooking to allow the lasagna to set for easier slicing. Use no-boil noodles for best results. Spray crockpot insert with nonstick spray for easier cleanup. Check for doneness starting at 3.5 hours to avoid overcooking. For creamier texture, blend cottage cheese with ricotta or swap half mozzarella for provolone.
