  • Author: neuriox

  • Yield: 6 servings 1x

Description

A cozy, cheesy breakfast casserole featuring everything bagel seasoning baked into a custard-soaked bagel base, perfect for family meals or brunch.

Ingredients

Scale
  • 4 cups cubed day-old everything bagels (about 120g)
  • 8 large eggs (room temperature)
  • 2 cups whole milk (480ml)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 1/2 cups shredded sharp cheddar cheese (about 150g)
  • 1 cup shredded mozzarella cheese (about 100g)
  • 2 tablespoons everything bagel seasoning blend
  • Optional add-ins:
  • 1/2 cup cooked breakfast sausage or bacon bits
  • 1/4 cup chopped green onions or chives
  • 1/2 cup diced bell peppers or mushrooms

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease your 9×9-inch baking dish with non-stick spray or butter.
  2. Cube your day-old bagels into roughly 1-inch pieces and place them in a large mixing bowl.
  3. In a separate bowl, whisk together the eggs and milk until fully combined, about 1-2 minutes. Add garlic powder, onion powder, salt, and pepper; whisk again to mix.
  4. Add shredded cheddar and mozzarella cheeses to the bagel cubes and toss gently to combine. Fold in any optional cooked sausage, bacon, or veggies if using.
  5. Pour the egg and milk mixture over the bagel-cheese mixture. Stir gently to coat all pieces evenly. Let rest for about 10 minutes to absorb the liquid.
  6. Transfer the mixture to the prepared baking dish, spreading evenly. Sprinkle the everything bagel seasoning on top, pressing lightly to stick.
  7. Bake uncovered for 40-45 minutes, until puffed, golden around edges, and a toothpick inserted in the center comes out clean.
  8. Let rest for 5-10 minutes before slicing and serving.

Notes

[‘Use day-old bagels to prevent sogginess; lightly toast fresh bagels if needed.’, ‘Let eggs and milk come to room temperature before mixing to avoid curdling.’, ‘Allow the mixture to rest before baking to let custard soak in for a tender texture.’, ‘Season generously with everything bagel seasoning for best flavor.’, ‘Tent with foil if top browns too quickly during baking.’, ‘Leftovers keep well refrigerated for up to 4 days; freeze before baking for up to 2 months.’]
