Description
A quick and simple summer dessert made by folding fresh or frozen berries into whipped heavy cream sweetened with powdered sugar. Light, creamy, and bursting with berry flavor.
Ingredients
- 1 cup (240 ml) heavy whipping cream
- 1 cup (150 g) fresh or frozen mixed berries (strawberries, blueberries, raspberries, blackberries)
- 2 tablespoons (25 g) powdered sugar
- Optional: 1 teaspoon vanilla extract
- Optional: fresh mint leaves for garnish
Instructions
- Rinse fresh berries gently and pat dry. Hull and slice strawberries if using. Thaw frozen berries and drain excess liquid, reserving about 2 tablespoons of berry juice if available.
- Chill mixing bowl and beaters in the refrigerator for about 15 minutes (optional but recommended).
- Pour heavy whipping cream into the chilled bowl. Beat on medium speed with an electric mixer or whisk vigorously by hand until cream starts to thicken.
- Add powdered sugar (and vanilla extract if using). Continue whipping until soft peaks form—peaks gently hold their shape but curl over slightly. Avoid overwhipping.
- Gently fold in the prepared berries and a splash of reserved juice using a spatula, keeping the mixture light and airy with juicy berry streaks.
- Spoon the berry fool into serving glasses or bowls. Serve immediately or chill in the fridge for up to 30 minutes to let flavors meld and dessert firm up slightly.
- Garnish with whole berries or a sprig of fresh mint and enjoy.
Notes
Chill your bowl and beaters before whipping cream for best results. Stop whipping at soft peaks to avoid turning cream into butter. Fold berries gently to keep the airy texture. Use fresh berries when possible; thaw and drain frozen berries to avoid watery dessert. Can substitute heavy cream with full-fat coconut cream for dairy-free version.
