These crispy, golden crescent roll sausage bites combine flaky, buttery pastry with juicy, savory sausage and melted cheddar cheese for a quick and crowd-pleasing snack.
Ingredients
- 1 package crescent roll dough (usually 8 rolls)
- 12 oz breakfast sausage (ground or pre-cooked links)
- 1 cup shredded cheddar cheese
Instructions
- Preheat your oven to 375°F (190°C). Line your baking sheet with parchment paper to prevent sticking.
- If using raw ground sausage, cook it in a skillet over medium heat until browned and fully cooked (about 6-8 minutes). Drain any excess grease and let it cool slightly. If using pre-cooked sausage links, chop into small bite-sized pieces.
- Carefully unroll the crescent dough onto a clean surface. Separate it into the pre-scored triangles.
- Place a small spoonful of cooked sausage (about 1 tablespoon) near the wide end of each triangle. Sprinkle about 1 teaspoon of shredded cheddar cheese on top of the sausage.
- Starting from the wide end, roll each triangle tightly towards the point, encasing the filling inside. Pinch the edges slightly to seal and prevent cheese from oozing out during baking.
- Place the rolled bites seam-side down on the baking sheet, spaced about 1 inch apart to allow for expansion.
- Bake for 12-15 minutes until the crescent rolls are golden brown and crispy.
- Let the bites rest on the baking sheet for 5 minutes before serving.

Do not overfill the crescent rolls to prevent leakage. Chilling the assembled bites for 10 minutes before baking helps manage sticky dough and seals the edges better. For extra crispy bites, brush tops with melted butter before baking. Drain excess fat from cooked sausage to avoid greasy bites. Leftovers can be stored in the refrigerator for up to 3 days and reheated in the oven at 350°F for 8-10 minutes to regain crispiness. Avoid microwaving to prevent soggy dough.
