  • 4 skin-on salmon fillets (about 6 ounces each)
  • 1 bunch asparagus (about 1 pound), trimmed
  • 1 large lemon, zested and juiced
  • 3 cloves garlic, minced
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • Pinch of red pepper flakes (optional)
  • Fresh parsley or dill for garnish (optional)

Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a medium bowl, whisk together olive oil, lemon zest, lemon juice, minced garlic, salt, black pepper, and red pepper flakes if using.
  3. Trim the asparagus by snapping off the woody ends.
  4. Toss asparagus in half of the marinade and spread evenly on one side of a rimmed baking sheet.
  5. Pat salmon fillets dry with paper towels and place skin-side down on the other side of the baking sheet.
  6. Brush salmon fillets with the remaining marinade on top and sides.
  7. Bake for 12-15 minutes until salmon flakes easily and reaches 145°F (63°C), and asparagus is tender with slight char.
  8. Optional: Broil for 2-3 minutes for extra crispy salmon skin, watching carefully to avoid burning.
  9. Garnish with fresh parsley or dill and serve immediately with lemon wedges.

Pat salmon dry thoroughly before seasoning for crispy skin. Preheat oven fully to 425°F. Do not overcrowd asparagus to avoid steaming. Rotate pan halfway through cooking if needed. Optional broil step enhances crispiness. Leftovers keep well refrigerated for 2 days; reheat gently in oven at 300°F.
