Ingredients
- 4 bone-in, skin-on chicken thighs (organic or free-range recommended)
- Salt and black pepper, to taste
- 4 cloves garlic, freshly minced
- 3 tablespoons unsalted butter, softened
- 1 tablespoon olive oil
- 12 ounces fresh green beans, trimmed (or thawed frozen green beans)
- 1 teaspoon dried thyme or 1 tablespoon fresh thyme
- A pinch of red pepper flakes (optional)
- A squeeze of fresh lemon juice (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Pat the chicken thighs dry with paper towels to ensure crispiness and set aside.
- Season both sides of the chicken generously with salt, pepper, and thyme.
- Heat a large, heavy-bottomed, oven-safe skillet over medium-high heat and add olive oil.
- Once the oil is shimmering, place chicken thighs skin-side down in the skillet. Press lightly for even contact.
- Cook for 6-8 minutes without moving them until a deep golden-brown crust forms. If the skin sticks, wait a little longer until it releases.

- Add the trimmed green beans to the pan, tucking them around the chicken. Season lightly with salt and pepper.
- Transfer the skillet to the preheated oven and roast for 12-15 minutes until the chicken reaches an internal temperature of 165°F (74°C) and the green beans are tender-crisp.
- Remove from oven and squeeze fresh lemon juice over everything. Toss the green beans in the garlic butter sauce.
- Let the chicken rest for 5 minutes before serving to lock in juices and flavor.
