This easy crockpot French dip sandwich recipe features tender slow-cooked beef chuck roast served on crusty rolls with a rich, savory au jus for dipping. Perfect for stress-free dinners that feel indulgent and comforting.
Ingredients
- 3 to 4 lbs beef chuck roast
- 2 medium yellow onions, sliced
- 4 garlic cloves, minced
- 3 cups beef broth (low-sodium recommended)
- 2 tablespoons Worcestershire sauce (optional)
- 1 teaspoon dried thyme
- 1 teaspoon freshly ground black pepper
- Salt to taste
- 6 French rolls or hoagie buns
- Butter (optional, for toasting buns)
Instructions
- Pat the beef chuck roast dry with paper towels and season all sides generously with salt and freshly ground black pepper.
- Optional: Heat a tablespoon of oil in a large skillet over medium-high heat and brown the roast on all sides, about 3-4 minutes per side, for added flavor.
- Place sliced onions and minced garlic at the bottom of the crockpot.
- Place the seared or raw roast on top of the onions and garlic.
- Pour beef broth over the roast, then add Worcestershire sauce (if using) and dried thyme. Do not stir.
- Cover and cook on low for 8 to 9 hours or on high for 4 to 5 hours until the roast is fork-tender and shreds easily.
- Remove the roast and shred it with two forks, discarding any large chunks of fat.
- Return shredded beef to the crockpot and stir into the cooking juices.
- Slice the rolls in half. If desired, spread butter on cut sides and toast in a skillet over medium heat until golden brown.
- Assemble sandwiches by piling shredded beef onto toasted rolls and serve with hot au jus for dipping.
Notes
Searing the roast before slow cooking adds depth of flavor but can be skipped for convenience. To thicken au jus, mix 1 teaspoon cornstarch with 1 tablespoon cold water and stir into juices, cooking on high for 10-15 minutes. Use low-sodium broth to control saltiness. Toasting the buns with butter adds a nice crunch and richness.
