  • 1 cup cherry tomatoes, halved
  • 1 small red onion, thinly sliced
  • 1 cup cucumber, diced
  • Fresh parsley, chopped (for garnish)
  • Optional: crumbled feta cheese

Instructions

  1. Marinate the chicken: In a medium bowl, combine minced garlic, lemon juice, olive oil, dried oregano, cumin, salt, and pepper. Add chicken thighs and coat thoroughly. Cover and marinate in the fridge for at least 15 minutes, up to 2 hours.
  2. Prepare the tzatziki sauce: Grate the cucumber and squeeze out excess moisture. In a bowl, mix Greek yogurt, grated cucumber, minced garlic, chopped dill, lemon juice, salt, and pepper. Chill in the fridge.
  3. Prep the veggies and base: Slice cherry tomatoes, thinly slice red onion, dice cucumber, and chop parsley. Cook rice or quinoa if not prepared.
  4. Grill the chicken: Preheat grill or grill pan to medium-high heat. Grill chicken for 4-6 minutes per side until cooked through (165°F internal temperature). Let rest for 5 minutes, then slice.
  5. Assemble the gyro bowls: In bowls, layer warm rice or quinoa, grilled chicken strips, cherry tomatoes, red onion, cucumber, and a dollop of tzatziki. Garnish with parsley and optional feta.
