  • 6 oz boneless, skinless chicken breasts or thighs
  • 8 oz baby red potatoes, halved
  • 6 oz baby carrots, whole
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning blend (oregano, basil, thyme, rosemary)
  • Salt and pepper to taste (optional)

Instructions

  1. Wash and halve the baby red potatoes for even cooking. Trim the ends off the baby carrots if needed. Pat the chicken dry with paper towels.
  2. Tear off a sheet of heavy-duty foil about 18 inches long. Place the potatoes and carrots in the center. Drizzle with 1 tablespoon of olive oil and sprinkle half of the Italian seasoning. Toss gently to coat the veggies.
  3. Place the chicken on top of the veggies. Drizzle the remaining 1 tablespoon of olive oil over the chicken, then sprinkle with the rest of the Italian seasoning, plus salt and pepper if using.
  4. Fold the foil edges together tightly, creating a sealed pouch with some space inside for steam circulation.
  5. Place the foil packet on a preheated grill or over hot campfire coals. Cook for 20–25 minutes, flipping halfway through. Check doneness by piercing the chicken with a fork; it should be opaque and juices clear.
  6. Let the packet rest for 3–5 minutes before opening. Carefully open the foil away from your face to avoid steam burns. Serve hot.

Notes

If potatoes are not tender after 25 minutes, reseal and cook for another 5–10 minutes. Use heavy-duty foil or double-wrap to prevent leaks. Flip packets halfway through cooking for even heat. Can be prepared ahead and refrigerated until cooking.
