Instructions
- Preheat your oven to 425°F (220°C). Position the oven rack in the middle for even baking.
- Grease a rimmed 9×13 inch (23×33 cm) sheet pan generously with unsalted butter or non-stick spray.
- In a large bowl, whisk together the flour, baking powder, baking soda, salt, and sugar until evenly combined.
- In a medium bowl, whisk the buttermilk, eggs, melted butter, and vanilla extract until smooth.
- Slowly add the wet ingredients to the dry ingredients, folding gently with a spatula until just combined. Some lumps are okay; do not overmix.
- Pour the batter evenly into the prepared sheet pan, spreading gently to fill the corners without pressing down hard.
- Bake for 15-18 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean.
- Cool the pancake in the pan for 5 minutes before slicing into squares or rectangles.

Notes
If batter is too thick, add a splash more milk to loosen. Avoid overmixing to keep pancakes fluffy. Preheat oven fully before baking. Grease pan well to prevent sticking. Add mix-ins like blueberries or chocolate chips on top before baking if desired.
