- 3/4 cup granulated sugar (150 grams), divided

Instructions
- Preheat your oven to 375°F (190°C).
- Peel and slice about 6 medium peaches. Toss them gently with 1/2 cup (100 grams) of granulated sugar and 1 teaspoon of ground cinnamon in a large bowl. Let them sit for 10 minutes to macerate.
- In a separate bowl, whisk together 1 cup (125 grams) all-purpose flour, 1 1/2 teaspoons baking powder, 1/4 teaspoon salt, and the remaining 1/4 cup (50 grams) granulated sugar.
- Pour in 1/2 cup (113 grams) melted unsalted butter, 3/4 cup (180 ml) milk, and 1 teaspoon vanilla extract. Stir gently until just combined; a few lumps are fine.
- Pour the batter into a greased 8×8-inch baking dish, spreading it evenly. Spoon the peach mixture and all the juices evenly over the batter without stirring.
- Bake for 35-40 minutes until the top is golden and juices are bubbling. Tent with foil if crust browns too fast.
- Let the cobbler rest for about 10 minutes after baking.
- Serve warm with a generous scoop of creamy vanilla ice cream on top.
Notes
If fresh peaches aren’t in season, use thawed frozen sliced peaches and reduce sugar slightly. For gluten-free, substitute all-purpose flour with a gluten-free blend. To keep topping crunchy, sprinkle coarse sugar before baking. Place a baking sheet below to catch drips if peaches are very juicy.
