Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Peel and slice about 6 medium peaches. Toss them gently with 1/2 cup (100 grams) of granulated sugar and 1 teaspoon of ground cinnamon in a large bowl. Let them sit for 10 minutes to macerate.
  3. In a separate bowl, whisk together 1 cup (125 grams) all-purpose flour, 1 1/2 teaspoons baking powder, 1/4 teaspoon salt, and the remaining 1/4 cup (50 grams) granulated sugar.
  4. Pour in 1/2 cup (113 grams) melted unsalted butter, 3/4 cup (180 ml) milk, and 1 teaspoon vanilla extract. Stir gently until just combined; a few lumps are fine.
  5. Pour the batter into a greased 8×8-inch baking dish, spreading it evenly. Spoon the peach mixture and all the juices evenly over the batter without stirring.
  6. Bake for 35-40 minutes until the top is golden and juices are bubbling. Tent with foil if crust browns too fast.
  7. Let the cobbler rest for about 10 minutes after baking.
  8. Serve warm with a generous scoop of creamy vanilla ice cream on top.

Notes

If fresh peaches aren’t in season, use thawed frozen sliced peaches and reduce sugar slightly. For gluten-free, substitute all-purpose flour with a gluten-free blend. To keep topping crunchy, sprinkle coarse sugar before baking. Place a baking sheet below to catch drips if peaches are very juicy.
