Description
A cozy, hands-off breakfast casserole made with store-bought cinnamon rolls soaked overnight in a vanilla custard, baked to gooey, custardy perfection and topped with a cream cheese glaze.
Ingredients
- One 12-ounce package refrigerated cinnamon rolls with icing
- 1 cup whole milk, room temperature
- 1/2 cup heavy cream, room temperature
- 3 large eggs, room temperature
- 2 teaspoons pure vanilla extract
- 1 teaspoon ground cinnamon
- 2 tablespoons packed light brown sugar
- 1/2 teaspoon fine salt
- Cream cheese glaze: icing packet from cinnamon rolls or homemade glaze with 4 ounces cream cheese (softened), 1/2 cup powdered sugar, 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Cut each cinnamon roll into quarters or smaller pieces and arrange evenly in a greased 8×8-inch baking dish.
- In a large bowl, whisk together milk, heavy cream, eggs, vanilla extract, ground cinnamon, brown sugar, and salt until smooth and combined.
- Pour the custard mixture evenly over the cinnamon roll pieces, pressing gently to ensure absorption.
- Cover the dish tightly with aluminum foil or plastic wrap and refrigerate for at least 6 hours or overnight.
- Remove casserole from fridge and let sit at room temperature for 10 minutes. Bake uncovered at 350°F (175°C) for 35-40 minutes until golden brown and custard is set. Tent with foil if browning too fast.
- While baking, prepare glaze if making from scratch by beating cream cheese, powdered sugar, and vanilla extract until smooth.
- Drizzle glaze over warm casserole after baking. Let cool for 10 minutes before serving.
Notes
Use room temperature ingredients for smooth custard. Cut cinnamon rolls into quarters or sixths for best soaking. Soak overnight for best texture. Tent with foil if top browns too quickly. Spray baking dish with non-stick spray or butter to avoid sticking. Glaze can be thinned with a teaspoon of milk if too thick.
