Ingredients
- 8 oz (225g) flank steak or sirloin, thinly sliced against the grain
- 1 tablespoon soy sauce
- 1 teaspoon cornstarch
- 1 teaspoon sesame oil
- 3 cups broccoli florets, washed and trimmed
- 2 cloves garlic, minced
- 1 teaspoon ginger, finely grated (optional)
- 2 tablespoons vegetable oil
- 3 tablespoons soy sauce
- 1 tablespoon oyster sauce (or hoisin sauce for vegetarian)
- 1 tablespoon brown sugar or honey
- 1/2 cup beef broth or water
- 1 teaspoon cornstarch mixed with 1 tablespoon cold water
Instructions
- In a small bowl, combine 8 oz thinly sliced flank steak with 1 tablespoon soy sauce, 1 teaspoon cornstarch, and 1 teaspoon sesame oil. Mix well and marinate for 10-15 minutes.
- In another bowl, whisk together 3 tablespoons soy sauce, 1 tablespoon oyster sauce, 1 tablespoon brown sugar or honey, and 1/2 cup beef broth or water. Set aside.
- Wash and cut 3 cups broccoli into bite-sized florets. Mince 2 cloves garlic and grate 1 teaspoon fresh ginger (optional).
- Heat 1 tablespoon vegetable oil in a wok or large skillet over medium-high heat. Add broccoli and stir-fry for 3-4 minutes until bright green and slightly tender but still crisp. Remove and set aside.
- Add another tablespoon vegetable oil to the pan. When hot, add marinated beef in a single layer. Let sear without stirring for 1 minute, then stir-fry for 2-3 minutes until browned but tender.
- Add minced garlic and grated ginger, stirring quickly for about 30 seconds until fragrant. Avoid burning the garlic.
- Return broccoli to the pan. Pour the prepared sauce over and stir to coat evenly.
- Mix 1 teaspoon cornstarch with 1 tablespoon cold water to create a slurry. Pour into the pan and stir constantly for 1-2 minutes until sauce thickens and becomes glossy.
- Taste and adjust seasoning if needed. Serve immediately over steamed rice or noodles.

Slice beef thinly against the grain for tenderness. Preheat pan well to sear beef properly. Avoid overcrowding the pan to prevent steaming. Use cornstarch slurry to thicken sauce for a glossy finish. Fresh broccoli preferred but frozen works if thawed and drained. For gluten-free, substitute soy sauce with tamari. Variations include swapping beef for chicken, pork, or tofu and adding extra vegetables.
