Ingredients
- 4 soft flour tortillas (6-inch or 8-inch, whole wheat or regular)
- 8 slices deli turkey (oven-roasted, smoked, or honey-roasted; about 4 oz)
- 4 slices cheese (mild cheddar, mozzarella, or Swiss; about 2 oz)
- 2 tablespoons cream cheese, softened
- Optional: sliced cucumbers
- Optional: lettuce leaves
- Optional: thinly sliced bell peppers
- Optional: spinach leaves
- Optional: black pepper
- Optional: ranch seasoning or Italian herbs
Instructions
- Lay out 4 flour tortillas on a clean cutting board.
- Spread about 1/2 tablespoon softened cream cheese over each tortilla, covering the whole surface.
- Lay 1 slice of cheese on each tortilla, then top with 2 slices of turkey, leaving a 1/2-inch border along one edge.
- If using, arrange thin slices of cucumber, lettuce, bell pepper, or spinach in the center of each tortilla.
- Sprinkle a pinch of black pepper or ranch seasoning over the fillings if desired.
- Starting from the filled edge, roll the tortilla up tightly toward the empty border. Press gently to seal.
- With a sharp knife, cut each roll into 4-6 pieces (about 1-inch thick). Wipe the knife between cuts for neat slices.
- If serving for a party, insert a toothpick into each piece to hold it together. For lunchboxes, skip toothpicks.
- Place roll-ups in lunch containers or arrange on a platter. If packing for later, wrap in plastic wrap or use air-tight containers. Refrigerate up to 24 hours.
Notes
Warm tortillas slightly in the microwave for easier rolling. Don’t overfill to prevent bursting. Cream cheese helps seal and prevents sogginess. Make ahead and refrigerate for up to 24 hours.
