- 1 large lemon, zested and juiced
- 4 cloves garlic, minced

- 1 cup cherry tomatoes, halved
- 1 cup broccoli florets
- 1 cup thinly sliced bell peppers (red or yellow)
- 1 teaspoon smoked paprika
- ½ teaspoon crushed red pepper flakes (optional)
- Salt and freshly ground black pepper to taste
- 2 tablespoons chopped fresh parsley or cilantro
Instructions
- Preheat your oven to 425°F (220°C).
- In a large mixing bowl, combine shrimp, olive oil, minced garlic, lemon zest, lemon juice, smoked paprika, crushed red pepper flakes (if using), salt, and pepper. Toss gently to coat shrimp evenly.
- Line a baking sheet with parchment paper. Spread broccoli florets, cherry tomatoes, and sliced bell peppers on the sheet. Drizzle with a little olive oil and sprinkle with salt and pepper. Toss to coat.
- Nestle the shrimp among the vegetables in a single layer, ensuring enough space to roast rather than steam.
- Roast in the oven for 8 to 10 minutes, or until shrimp are pink and opaque and vegetables have a slight char. Check at 10 minutes if shrimp are extra large to avoid overcooking.
- Remove from oven, sprinkle chopped fresh parsley or cilantro over the top, and gently toss everything on the pan.
- Serve immediately, warm, with your choice of side or crusty bread.

Do not overcrowd the sheet pan to avoid steaming the shrimp and vegetables. Keep an eye on shrimp cooking time to prevent toughness. Zest lemon before juicing for more zest. Fresh garlic is preferred for vibrant flavor. Optional: add panko breadcrumbs mixed with olive oil on veggies for extra crunch.
