Ingredients
- 6 bone-in, skin-on chicken thighs
- 1/2 cup apricot preserves (about 160g)
- 2 tablespoons olive oil
- 1 tablespoon apple cider vinegar or lemon juice
- 2 cloves garlic, minced
- 1 tablespoon fresh thyme leaves, finely chopped
- Salt, to taste
- Black pepper, to taste
- Pinch of chili flakes (optional)
Instructions
- Preheat your oven to 425°F (220°C).
- In a small mixing bowl, combine apricot preserves, olive oil, apple cider vinegar (or lemon juice), minced garlic, fresh thyme, and chili flakes if using. Whisk until smooth and set aside.
- Pat the chicken thighs dry with paper towels to remove excess moisture.
- Season both sides of each chicken thigh generously with salt and black pepper.
- Arrange the chicken thighs skin-side up on a rimmed baking sheet or cast-iron skillet, leaving space between each piece.
- Brush the chicken thighs with half of the apricot glaze, coating the skin well.
- Roast the chicken for 25 minutes undisturbed until the skin starts to brown and crisp.
- Remove the chicken from the oven, brush with the remaining glaze, and turn on the broiler.
- Broil for 2-4 minutes, watching closely to avoid burning, until the glaze caramelizes and becomes sticky and bubbly.
- Let the chicken rest for 5 minutes before serving to allow juices to redistribute.
