  • 4 ears fresh corn on the cob, husked
  • 1/2 cup mayonnaise (or Greek yogurt for a lighter option)
  • 1/4 cup Mexican crema or sour cream
  • 2 tablespoons fresh lime juice
  • 2 teaspoons Tajin seasoning
  • 1/2 cup Cotija cheese, crumbled (feta or Parmesan as substitutes)
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon chili powder (optional)
  • 2 tablespoons fresh cilantro, chopped
  • Salt to taste

Instructions

  1. Preheat your grill or grill pan to medium-high heat, about 400°F (204°C).
  2. Husk the ears of corn, removing all silk. Brush each ear with melted butter and season lightly with salt.
  3. Grill the corn, turning every 2-3 minutes until all sides are golden and slightly charred, about 10-12 minutes. Kernels should be tender.
  4. While the corn grills, mix mayonnaise, Mexican crema (or sour cream), lime juice, and half the Tajin seasoning in a bowl until smooth.
  5. Once the corn is done, immediately brush the creamy sauce generously over each ear while still warm.
  6. Sprinkle the remaining Tajin seasoning over the coated corn, then top with crumbled Cotija cheese. Optionally, dust with chili powder and garnish with chopped cilantro.
  7. Serve warm with lime wedges on the side for extra zing.

Notes

Use fresh lime juice for best flavor. Coat the corn with sauce while warm to help it stick. Watch the corn closely to avoid burning. Substitute Greek yogurt for mayonnaise for a lighter sauce. Leftovers can be stored in an airtight container in the refrigerator for up to 2 days and reheated gently on the grill or skillet.
