- 8 oz (225 g) cream cheese, softened
- 1 can (15 oz / 425 g) whole kernel corn, drained
- 2 medium jalapeños, roasted and finely chopped
- ½ cup (120 ml) sour cream
- 1 cup (100 g) shredded cheddar cheese
- 1 tsp garlic powder
- 1 tbsp fresh lime juice
- 2 stalks green onions, thinly sliced
- Salt and black pepper, to taste
Instructions
- Roast the jalapeños on a hot skillet or grill pan over medium-high heat, turning occasionally, until skin is blistered and charred, about 8-10 minutes.
- Transfer jalapeños to a bowl, cover with plastic wrap or lid to steam for 5 minutes. Peel off charred skin, remove seeds if desired, and finely chop.
- In a mixing bowl, combine softened cream cheese and sour cream. Beat until smooth and creamy, about 1-2 minutes.
- Stir in drained corn, shredded cheddar, garlic powder, lime juice, salt, and black pepper until well incorporated.
- Gently fold in chopped jalapeños and sliced green onions evenly.
- Cover and refrigerate for at least 30 minutes for best flavor, or serve immediately if short on time.
- Before serving, stir and adjust salt or lime juice if needed. Serve with tortilla chips, crackers, or fresh veggie sticks.
Notes
Roasting jalapeños softens their heat and adds smokiness. Use softened cream cheese for smooth texture. Chilling the dip improves flavor melding but can be served immediately. Adjust heat by removing jalapeño seeds or using fewer peppers. Optional toppings include crushed red pepper flakes or crispy bacon.
