- 1 lb (450 g) ground beef (80/20 preferred)
- 2 medium sweet potatoes (about 1 lb / 450 g), peeled and cut into 1-inch cubes
- 2 tbsp (30 ml) olive oil, divided
- 2 cloves garlic, minced
- 1 small onion, finely chopped
- 1 tsp (2 g) chili powder
- 1 tsp (2 g) smoked paprika
- Salt and black pepper, to taste
- 3 tbsp (45 ml) hot honey
- 1 tbsp (15 ml) fresh lime juice
- A handful fresh cilantro, chopped (optional)
- About 2 cups (400 g) cooked rice or quinoa
Instructions
- Preheat the oven to 425°F (220°C).
- Peel and cut sweet potatoes into 1-inch cubes. Toss with 1 tablespoon olive oil, salt, and black pepper in a mixing bowl.
- Spread sweet potatoes evenly on a baking sheet and roast for 25-30 minutes, turning halfway through, until golden and tender.
- While potatoes roast, heat 1 tablespoon olive oil in a large skillet over medium-high heat.
- Add chopped onion and sauté for 3 minutes until translucent.
- Add minced garlic and cook for 30 seconds until fragrant.
- Add ground beef, break it up with a spoon, and cook for 6-8 minutes until browned and cooked through. Drain excess fat if needed.
- Stir in chili powder, smoked paprika, salt, and pepper. Cook for another 2 minutes to meld flavors.
- In a small bowl, combine hot honey and fresh lime juice, stirring until smooth.
- Assemble bowls by spooning cooked rice or quinoa into serving bowls, topping with roasted sweet potatoes and seasoned ground beef.
- Drizzle hot honey lime sauce generously over each bowl and sprinkle with chopped cilantro if using.
- Serve immediately.
Notes
Keep an eye on sweet potatoes toward the end of roasting to avoid burning. Warm thick honey slightly before drizzling for easier pouring. Drain excess fat from beef to avoid greasiness. Adjust hot honey amount to taste for heat level.
