- 1 package cheese-stuffed tortellini, fresh or frozen
- 6 ounces salami, thinly sliced or diced
- 1 cup provolone cheese, cubed or shredded
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, thinly sliced
- 1/2 cup black olives, sliced
- 1/2 cup banana peppers, sliced
- 1/4 cup fresh basil, chopped
- 1/2 cup Italian dressing, plus more as needed
- 1/4 cup Parmesan cheese, grated
Instructions
- Bring a large pot of salted water to a boil. Cook the cheese-stuffed tortellini according to package instructions (usually about 8-10 minutes). Drain and rinse with cold water to cool.
- While the pasta is cooking, prepare the other ingredients. Slice the salami into bite-sized pieces, cube the provolone cheese, halve the cherry tomatoes, and slice the red onion, black olives, and banana peppers.
- In a large mixing bowl, combine the cooked tortellini, salami, provolone cheese, cherry tomatoes, red onion, black olives, and banana peppers.
- Drizzle the Italian dressing over the salad. Start with about 1/2 cup and add more as needed to coat everything evenly.
- Toss the salad gently using tongs or a large spoon, ensuring all ingredients are evenly distributed and coated with the dressing.
- Sprinkle the chopped fresh basil and grated Parmesan cheese over the top. Toss lightly again.
- Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to let the flavors meld together. (Optional but recommended for the best taste.)
- Before serving, give the salad a quick toss and check the seasoning. Add more dressing, salt, or pepper if needed.
